I consider my body's need to be gluten free a blessing and a curse.
One of the blessings is, it makes me really stop and think about what I
eat and what I feed my family, friends, and neighbors. I'm certain now
that the foods we eat have a direct impact on our personal health and
on the health of our planet.
The curses include several gluten intolerance symptoms. Most
of which many other women suffer with daily without knowing the cause
of their discomfort. Known symptoms include bloating, headaches,
tiredness, and dry skin. There are many others.
Why would a person eat something that makes them sick?
Most of
us don't purposely do this. We think our symptoms are caused by other
things. Food is so ubiquitous that we often can't see it as a leading
cause of disease. Gluten can be found in things you'd never suspect
like soy sauce, beer, and vitamins.
At least I know what's causing or contributing to many of my
health issues. By knowing I can help myself and others learn about food
allergies and how to get and stay healthy while living with them.
Eating should be simple.
Being intolerant means I have to think extra hard about what's
in the food I cook and consume. If I'm at a restaurant I can't have the
bread they bring to the table. I love bread!! Pizza's out. Carrot cake
for my birthday? Sadly, no. Unless some enterprising baker finds this
niche.
A second J-O-B
Eating a gluten free diet often feels like a full-time job and
being able to help others with their diet dilemma is one of the few
perks of that job. The primary task is researching food.
As I research gluten free living I will share my experiments
and knowledge. That means, When I find appropriate foods, recipes, and
products I will use this site to tell others. When I visit a restaurant
and discover a safe dish I'll talk about the experience. I'll even
transform some favorite dishes to fit.
Like most people today, I'm starting to spend my hard-earned
dollars more prudently. As a result, I'm learning about gluten free
cooking, baking, and non-food products. Being a healthy woman has to be
enjoyable. Since eating is something we all do every, single day it has
to be enjoyable as well. Healthy Women Unite! Let's eat and learn
