Amy's Kitchen Thai Stir-Fry
Initial reaction to Amy's Kitchen meal: Where's the rest of my
food?! Okay I have that same reaction to almost all frozen meals. I'm
use to restaurant meals where there's more food, which of course is
half the reason I'm overweight. The Amy's Kitchen meal was 9-1/2
ounces, that's normal for a frozen entree.
The Verdict on Amy's Thai Stir-Fry
Overall, I'd buy it again so I've added it to my keep-on-hand, gluten free products list.
The
first flavorful bite helped me get over my portion issues. The tofu was
seasoned perfectly so I didn't mind that it was tofu. The coconut milk
flavor was great. It was mild and actually tasted like coconut milk.
Usually, I stay away from coconut flavored foods because they're too
often flavored with imitation coconut and taste like fake food.
In addition to being gluten free, you'll be happy to know that there are no GMOs in Amy's thai stir-fry, which is more than General Mills cereals will say. It's also vegetarian. And all the vegetables are organic. Which leads me to wonder ...
Do You Get a Full Vegetable Serving?
A lot of vegetables are mentioned in the ingredient list; broccoli, red
bell peppers, yellow bell peppers, carrots, cabbage, yellow zucchini,
red jalapenos. Yum!
The little color bits looked good in the meal but I don't think they add up to a serving.
I have two ideas to combat this issue;
- Add a salad. That will visually cue you that you're eating enough and help you reach your 5+ a day vegetable goal.

Use the frozen meal as the inspiration for a dinner entree. That way
you can have bigger chucks of the vegetables and practice your recipe
creation.
Use Frozen Meals to Help You Cook More

your meal to cook reread the package. I'm sure you read some of it
before buying the meal but this second read will help you with cooking
101. And you know that cooking at home is the sure way to become a
gluten free healthy woman.
Look at the spices in the ingredient list.
The Amy's Kitchen thai stir-fry has cilantro, garlic, sesame, ginger,
and lemon grass.

That
little piece of information could help you the next time you're in the
kitchen trying to add flavor to some rice or vegetables. If you liked a
frozen meal you'll probably like the spice combination in something you
cook yourself.
Remember to look for the "gluten free" label. All are not gluten free.
